Haystacks With Hope

One of my favorite things to do with Hope is cook or bake.  She loves it so much and is so proud when we're done.  Her little face lights up every time I ask, "Hey, Hope... wanna make something yummy?!"  It's adorable.  Here's a fun and easy recipe we did together for Haystacks:


Ingredients:
Chow Mein noodles, Chocolate Chips, Peanut Butter Chips, or Butterscotch Chips (whatever kind you prefer)

Step 1:  Melt your chips in a bowl.  We tried the microwave first and I burned up the chocolate chips.  The glass bowl in a pot of boiling water (with a little milk) worked much better for us.

Step 2:  Spread your noodles in a bowl or dish and pour the melted chocolate in.  You want just enough to coat the noodles.

Step 3:  (This is the fun part!)  Mix the ingredients and form "haystacks" with your hands.  (Be careful not to burn your hands on the hot, melty chocolate.)  We did ours just a tad bit smaller than baseballs.

We used all three flavors because everyone in the house wanted something different, but in my opinion the butterscotch with a little peanut butter is the best!  The addition of coconut or pecans to the chocolate would have been delicious, too.  We ate these until our bellies hurt a little.  That's how you know they're really good.  ;)


This is such a simple and fast treat to make.  I will definitely be whipping up a batch for the next party I attend.  :)

  4. YES! This is exactly it... there was a cookie-thing that my godmother used to make all of the time when I was very little. I knew that it was crunchy and butterscotchy, but I couldn't figure out for the life of me how to recreate it! So, thank you thank you-- glad to see you're starting a whole new generation of haystack lovers!

  36. These remind me of one of my all time favorite "cookies" we make every Christmas. They are chow mein noodles, melted chocolate chips, peanuts, and marshmallows... SO good. You should give them a try! :)

  40. I make similar treats but I used corn flakes that I crush a little with the butterscotch/peanut butter mixture then I add some sliced almonds into the mix. They're sooo yummy and so easy!
