Ingredient list: rice paper wrappers, spicy peanut sauce (recipe below), fresh cilantro and mint, cabbage, carrots, sprouts, cucumber, and sweet chili sauce for dipping
Spicy Peanut Sauce: 1 cup peanut butter, 1/2 cup of hot water, 2-3 cloves minced garlic, 2 Tbsp soy sauce, 1 tsp ground cumin, 1/4 tsp cayenne powder, a few pinches of red pepper flakes, 1/2 tsp curry powder, 1/4 cup sweet chili sauce
**whisk these ingredients together in a bowl and warm to infuse flavors**
Take your rice paper and soak in warm water for 10-20 seconds. Don't leave it for too long or it will rip.
Drain the paper and lay flat. Add cabbage, sprouts, carrots, cucumber, cilantro, mint, and peanut sauce. Don't over-stuff or you won't be able to close it!
Fold the ends in, and then grab a remaining side and roll tightly. Chill for about a 1/2 hour. Serve with a side of sweet chili sauce.
This is a vegetarian version because we don't eat much meat around this house, but you could easily add shrimp or chicken. Don't be afraid to customize! They are so quick and easy to make. :)

i've had these before! SO GOOD! around here at least, they are called spring rolls. I love them with shrimp the best :) gonna try out your recipe for sure!

ReplyDeleteMatt and I have been experimenting with spring rolls this spring as well. We love them from our local thai restaurant but wanted to be able to make them at home. It was my first time using the rice paper and it was fun. I like how you added the peanut sauce inside, I'm gonna have to try this.
ReplyDeleteMy family makes these all the time! So easy and so delicious. We make ours with rice noodles, sausage and fresh spinach nearly every time, but these look super good! I'm going to have to try making them with peanut sauce.

Here in Australia we simply call them 'rice paper rolls' and they're a starter at most Asian restaurants. I always think that it's the mint that makes them so good. A small gathering of super thin rice noodles inside is good with shrimp, cucumber and sprouts...with satay sauce. OMG, yum!!!
ReplyDeleteLast night i was sick as a dog with the flu, feeling sorry for myself because I was starving and NOTHING sounded good to me....and then I read your post and I NEEDED those spring rolls! So today, when I regained a bit of strength, I went out and bought all the ingredients and made them (I'm eating them right now) and they are AMAZING! And very simple to make! Thank you!
